Chicken Shami Kabab is a delicious and popular Pakistani and Indian dish. It's made with minced chicken and various spices, and then shallow-fried to perfection.

- 500g boneless chicken, cut into small pieces
- 1 cup chana dal (split Bengal gram), washed and soaked for 2 hours
- 1 large onion, finely chopped
- 2-3 green chilies, finely chopped
- 4-5 cloves of garlic
- 1-inch piece of ginger
- 1 teaspoon cumin seeds
- 1-inch cinnamon stick
- 3-4 green cardamom pods
- 4-5 black peppercorns
- 4-5 cloves
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
- 2 tablespoons chopped fresh mint leaves
- 2 tablespoons lemon juice
- 1 egg
- Oil for shallow frying
Instructions:
- In a large pot, combine the soaked chana dal with 1 cup of water and cook it until it becomes tender and the water evaporates. Set it aside to cool.
- In a separate pot, cook the chicken pieces with a little water, salt, and turmeric powder until the chicken is fully cooked and the water evaporates. Allow the chicken to cool down.
- In a food processor or blender, add the cooled chana dal, cooked chicken, chopped onion, green chilies, garlic, ginger, cumin seeds, cinnamon, cardamom pods, black peppercorns, cloves, red chili powder, garam masala, and salt. Blend everything together until you get a smooth mixture.
- Transfer the mixture to a bowl and add chopped coriander leaves, mint leaves, and lemon juice. Mix well.
- Take a small portion of the mixture and shape it into a flat round kabab.
- In a separate bowl, beat the egg.
- Heat some oil in a frying pan over medium heat.
- Dip each kabab in the beaten egg and place it in the hot oil. Shallow fry the kababs until they are golden brown and crispy on both sides.
- Remove the kababs from the pan and place them on a paper towel to drain excess oil.
